Cinnamon Buns
Soft doughy buns with a gooey sweet cinnamon centre and drizzled with a creamy icing , these are soo delicious.
Ingredients: 300grams gluten free self raising flour ( I use doves) 100 grams mashed potato 200 ml plant based milk ( I used organic soya milk) 60 ml Coconut oil 50 grams coconut sugar Pinch salt 7 grams instant yeast 1 tablespoon flax meal mixed with 3 tablespoons water Cinnamon butter Vegan butter or coconut oil Ceylon Cinnamon Coconut sugar Icing 150 grams cashews soaked for 3 hrs 50 grams coconut milk 20 grams coconut oil 40 grams agave syrup Optional ( lemon zest, orange zest or vanilla) Directions:
Step 1: Mix all dry ingredients in a bowl. Step 2: Add the cold mashed potato Step 3: Melt the oil and mix with the milk. Add this to the dry ingredients. Step 4: Add the flax gel to the mixture Step 5: Mix well until all combined. It should form a soft but firm ball. Step 6: Place it in a bowl, rub 1 teaspoon of oil on top and wrap with cling wrap. Step 7: Place it in a warm place and let it rise or double in size. (About 1 hr). Step 8: Now knead and roll out the dough on a baking sheet. Step 9: Mix the cinnamon butter and spread the rolled out dough with the mixture Step 10: Roll up the dough and then cut into 3-4 cm pieces Place on a round baking dish. Step 11: Cover and leave them to rise in a warm place for about an hour. Step 12: Once risen bake in a preheated oven for 30 minutes on 180 degrees. Step 13: Blend all the icing ingredients to form a smooth creamy icing Step 14: Once buns are cooked let them cool for 10 minutes then drizzle with the icing sugar Enjoy !! |
