GLUTEN FREE OLIVE PIES
My son is crazy about olives, He loves them and he also has a  love for bread , so it was a no brainer that olive pies would be a bit hit with him!!
Ingredients:
FILLING

140 grams Olives
1/2 Onion Diced
1 cup Fresh Cilantro Chopped

DOUGH
250 grams Gluten Free Self Raising Flour
40grams Olive oil
1 Medium Potato (Boiled & Mashed)
1/2 cup (125ml) of water


Directions:
Step 1. Peel the potato and put it to boil until it is soft.
Step 2. Pit the olives and cut them into smaller pieces, Dice the onion and chop up the cilantro.
Step 3. Mix all the ingredients for the filling in a bowl, and set aside.
Step 4. Once potato is cooked mash in up.
Step 5. Next in big bowl combine the flour , olive oil, mashed potato and mix it. Then add the water mix well, and then form a ball of dough.
Step 7. Kneed the dough for a minute to ensure all well combined and easy to roll out.
Step 8. Place a piece of the dough between some baking paper and with a rolling pin , roll out the dough
Step 9. Place a couple tablespoons of the olive mixture and then roll the dough over to close it.
Step 10. Brush with some olive oil.
Step 11. Place in a preheated oven on 180degrees and cook for about 30 minutes until golden brown.
